Kokum Sharbat
Kokum, Scientifically known as Garcinia Indica.
Ingredients:
- Dried kokum petals – 1/2 cup.
- Water – 4 cups
- Sharkara or unrefined sugar – 4-5 tablespoons (adjust to taste)
- Roasted cumin powder – 1/2 tablespoon
- Black salt – A pinch
- Fresh mint leaves for garnish (optional)
Method of Preparation:
- Rinse the dried kokum petals under water to remove any dust or impurities.
- In a large bowl, combine the kokum petals and water. Let it soak for at least 4-6 hours, or preferably overnight to infuse its flavor into the water.
- After soaking, mash the kokum petals and strain the kokum-infused water into another bowl using a fine mesh strainer or muslin cloth.
- Add sugar, black salt, and roasted cumin powder to the strained kokum water and stir well.
- Garnish with fresh mint leaves if desired.
- Heat kokum+ infused water (soaked for 30min) on the stove for 5 to 6 min, mash it well, once cooled, strain with fine mesh, add other ingredients and stir, it’s ready to drink.)

Method of Preparation:
- In a large mixing bowl, add the sattu flour.
- Slowly pour in the chilled water while continuously whisking to avoid lumps.
- Add lemon juice, chopped mint leaves, roasted cumin powder, black salt, and sugar (if needed) to the sattu mixture. Stir well.
- Adjust the quantity of ingredients according to taste.
- Pour the sattu drink into glasses and garnish with fresh mint leaves.
- Have immediately and enjoy the cooling and nutritious sattu drink on a hot summer day.!!!!
