Ingredients:
- Whole Green gram (moong) – 1 cup
- Water – 14 cups
- Ghee (clarified butter) – 1 tablespoon
- Cumin seeds – 1 teaspoon
- Grated ginger – 1 tablespoon
- Clove – 2-3 in number
- Asafetida (hing) – 1/4 teaspoon
- Turmeric powder – 1/2 teaspoon
- Coriander powder – 1/2 teaspoon
- Cumin powder – 1/2 teaspoon
- Black pepper powder – 1/2 teaspoon
- Cinnamon powder – 1/4 teaspoon
- Nutmeg powder – 1/4 teaspoon
- Ajwain (carom) seeds – 1/2 teaspoon
- Dried Oregano- 1/2 teaspoon
- Dried basil – 1/2 teaspoon
- salt – 1/2 teaspoon or to taste.
- Freshly squeezed lemon juice – ½ teaspoon or to taste.
Method of preparation –
Rinse the Green moong in cold water until the water runs clear.
- In a large pot, add the green moong and 14 cups of water. Bring to a boil, then reduce the heat to low and simmer for about 20-25 minutes, or until the dal is soft and fully cooked.
- In a separate pan, heat the ghee over medium heat. Add the cumin seeds, grated ginger and asafetida and saute for a few seconds.
- Add the turmeric powder, coriander powder, cumin powder, black pepper powder, cinnamon powder, nutmeg powder, ajwain seeds, dried oregano, and dried basil. Stir well and saute for a few seconds.
- Add this spice mixture to the cooked moong and stir well. Add salt to taste and simmer for another 5-10 minutes.
- Add freshly squeezed lemon juice to taste and stir well and serve hot.
