Ingredients
- Beetroot (Beta Vulgaris): 2 mediumsized
- Amla (Emblica officinalis): 2 – 3 medium-sized
- Fresh Turmeric (Curcuma amada): 2 (Preferred mango turmeric )
- Carrot (Daucus carota): 1
- Mustard seed Powder: 1 tbsp
- Salt- As per taste (preferably rock salt)
- Lemon: 1 medium size
- Water: 1 liter
Method of Preparation
- Peel and slice the beetroot, amla, turmeric, carrot and lemon into thin pieces.
- Combine beetroot, amla, turmeric, and carrot in a glass jar.
- Add mustard powder and salt.
- Mix it well.
- Pour water over the mixture, leaving some space for fermentation.
- Cover the jar with a muslin cloth/cotton cloth and let it ferment in a warm, dark place for 3–5 days.
- Stir daily with a clean spoon.
- Taste the Kanji after 3 days; it should have a tangy flavour.
- Strain and store in an air-tight container.
