Tambli is a thin yoghurt-based curry made by grinding herb /vegetable/ greens/fruits/spices along with coconut & chillies & mixed with buttermilk. It tastes different depending on the ingredients used.
Tambli is derived from the Kannada word “thampu”. Thampu means cold. So tambli is a cooling and detox food which helps in keeping our body cool, aids digestion, is light in nature, medicinal, and soothing.
Here we are going to make tambli with pomegranate peel.
Ingredients –
- Pomegranate peels made into pieces – 1/4 cup
- Cumin seed / jeera – 1/2 tsp
- Pepper – 1/2 tsp to 1 tsp
- Coconut, fresh/desiccated – 1/4 cup
- Yoghurt/buttermilk – 1/2 cup
- Ghee – 1 tsp
- Salt – according to taste
To Temper –
- Ghee – 1 tsp
- Mustard – 1 tsp
- Cumin seeds / Jeera – 1/2 tsp
- few curry leaves
Preparation-
- Wash and clean the pomegranate peels. Gently scrape all the inner thin whitish portion of the peel as it is having a mildly bitter taste.
- Next, cut the cleaned pomegranate peels into small pieces.
- Take a frying pan and add 1/2 teaspoon of ghee and pomegranate peels. Roast on low medium flame, till the peels, are well sauteed, crisp, and turned brownish.
- Add cumin seeds and pepper and fry them until they become a little crispy and let them cool down.
- Grind the fried ingredients along with salt, coconut, and water and make it into a smooth paste.
- Put the ground paste into a serving bowl. Add the buttermilk and mix properly. The consistency of tambli should be thinner than chutney, something like rasam consistency. Add little water along with curd /buttermilk as per your choice.
- Now, to temper the tambli. In a small kadhai, add half teaspoon of ghee. When ghee is hot, add mustard seeds and jeera seeds. When mustard seeds splutter, add curry leaves.
- Add this tempering to the tambli mixture.
- Pomegranate tambli is ready to serve!!!
- You can also use 2-3 pomegranate flowers and 3 – 10 tender leaves in this recipe along with peels
Notes –
- Remove the inner thin white peel of pomegranate nicely. Else tambli will taste bitter.
- If fresh pomegranate peel is not available, you can use the sun-dried peel as well.
- For better taste, Fry the peels nicely till it becomes golden in colour.
- Use sour curd/buttermilk.
- It is always advised to serve tambli when it is fresh. It won’t be that tasty after being refrigerated.
About drying the peels –
Remove all the white sheath beneath the fruit, and dry under the sun. When it is crisp, it should break while folding. Store it in an airtight jar or zip lock. Use whenever it is needed.

Pomegranate –
Pomegranate is one of the healthiest fruits, which is loaded with nutrients. It is the greatest source of iron, vitamins, minerals, fiber, and antioxidants.
About pomegranate peels –
Peels of pomegranate are astringent as well as bitter in taste. It can help in reducing swellings, inflammations, diarrhoea, dysentery, bleeding, etc. It encourages healing, boosts digestion, and is also a tonic for the liver. It is also rich in antioxidants. Pomegranate peels also provide antibacterial activity. It is abundant in Vitamin C which helps for proper growth and speeds up the healing process of wounds.
The peels have tannins within them which help to decrease inflammation of the intestine, swelling of haemorrhoids, tighten up the intestinal lining, prevent bleeding throughout diarrhoea and improve digestion.
About buttermilk (According to Ayurveda) – Buttermilk improves digestion and mitigates Kapha and Vata. In Ayurvedic treatment, it is useful in the treatment of inflammation, digestive disorders, gastrointestinal disorders, lack of appetite, and anaemia. Buttermilk is highly beneficial in Vata imbalance- related disorders.
One cup serving of processed buttermilk contains – 110 calories, 9 grams of protein,3 grams of fat, 13 grams of carbohydrates, and less than 1 gram of fiber. Buttermilk is an excellent source of protein, vitamin A, vitamin B, vitamin D, calcium, and potassium.
