There are various ways to make khichadi. Since, this recipe is patient-oriented and health-oriented we are trying to bring-forth a delicious blend that is full in nutrition, especially- rich in proteins and good for digestion for someone who is not able to find taste in anything.
khichadi Servings – 4
Time
• Preparation Time- 10 minutes
• Cooking Time- 20-25 minutes
• Total Time- 30-35 minutes
Ingredients
• 2 tsp Ghee/Clarified Butter
• Spices
o A pinch or two of Heeng/Asafoetida
o 1/4 tsp- Jeera/Cumin
o 1/2 tsp- Haldi/Turmeric powder
o Black Pepper- as per preference
o Namak/Salt- as per taste- preferably
Saindha Namak- Rock salt
• 3/4 cup Rice
• 1/3 cup Yellow Moong beans/ Moong Dhuli Dal
• Vegetables
o 1/2 cup Lauki/Bottle Gourd – Grated
o 1/2 cup Parval/Ridge Gourd- Grated
o 1/2 cup Kachcha Papita/Raw Green Papaya- Grated
• 3 cup Hot Water
Preparation
1. Rinse and wash lentils and rice with water and soak them for 15-20 minutes.
2. Add ghee to the heated pressure cooker. Keep the flame low.
3. Now add asafoetida/heeng.
4. Add cumin/jeera, and let it splutter.
5. Add turmeric/haldi. Let it cook on low flame for about 30-40 seconds.
6. Now add the grated vegetables, black pepper, and salt. Put them on low flame.
7. Now add the washed rice and lentils.
8. Add hot water. Close the lid and let the Khichdi be cooked on high flame till one whistle.
9. Lower the flame for another 15 minutes.
10. Garnish with coriander leaves and serve hot.
Ayurveda refers to Rice as being a light food and Moong bean as having the qualities of balancing all three doshas (Vata, Pitta and Kapha) which is necessary to maintain health. Consumption of this blend of Rice and Moong bean can easily ignite the already extinguished or diminished digestive fire and promote the extinguished hunger due to illness.
